The modern process of making Olive oil is much faster as machines now do the heavy lifting. Olives are combed from the trees, washed, pressed, and stored for a few days to prevent fermentation. In the second phase, the crushed Olives are slowly warmed and milled so they can release their oil quickly. The mill turns the Olives with sharp blades, and the resulting paste is pressed under high pressure. The paste releases the oil droplets, in a process called maceration, before being spun in a centrifuge to pull out the oil and water. The final phase removes the water and the pure Olive oil is left.
Olive oil has been applied to the skin since ancient times. In Greece and Rome, athletes and warriors would rub Olive oil on their bodies.
